Quesadilla salvadoreña

Ingredients:

  • 1 1/2 cup of grated Parmesan cheese

  • 1/2 cup whole milk

  • 1 1/2 cup rice flour (I use 1 cup of gluten free & 1/2 cup of rice flour)

  • 1 1/2 teaspoon baking powder

  • 1 cup of sugar (I use Sugar in the Raw)

  • 1/2 cup sour cream

  • 4 eggs

  • 1 cup melted butter

  • Sesame seeds to add on top of the batter

Instructions:

*Preheat oven to 375 degrees.

1. In a small bowl, mix grated Parmesan cheese with milk. Set aside.

2. In another bowl, separate the egg whites from the egg yolks. Set aside.

3. In a bigger bowl, sift the flour and the baking powder together. If you don’t have a sifter, use a strainer and add the ingredients on it. Shake the strainer for sifting. Then add the sugar and mix.

4. Now add the egg whites and yolks to the flour and sugar mixture. Mix well.
(Consistency should be slightly clumpy.)

5. Add the sour cream, melted butter, and cheese mixture to the bigger bowl. Mix until all is one consistency.

6. In a round 9x3 cake pan, spray pan with baking spray or rub a little bit of butter and flour onto the pan to avoid it from sticking.

7. Sprinkle sesame seeds over the top of the batter. Now place the batter in the oven and bake for 35 mins.

Your Quesadilla should look golden with a tinge of brown around the sides. This can be served with a warm drink or on its own. Hope you like it! :)
