Healing Egg Drop Soup

Yield: 4 servings
Cooking Time: 25-35 minutes

Ingredients:

  • 2 Chicken Breasts

  • 1 stick of celery, chopped.

  • 1 cup of carrots, chopped.

  • 1 1/2 cups of broccoli, chopped.

  • 2 potatoes, diced.

  • A handful of angel hair pasta

  • 2-4 eggs (amount desired)

  • 1/4 cup of Maggi Chicken Bouillon powder

  • Pinch of salt (if desired)

  • A stem of cilantro (optional)

Instructions:

1. First add raw chicken breasts into a large pot of water. The water capacity should not fill to the brim of the pot, but rather is enough to cover the chicken. Bring water to a boil for about 10-12 minutes.


2. Add half of the chicken bouillon powder to the boil.


3. As the chicken continues to boil, add the diced potatoes and handful of angel hair pasta to the water. Let it cook for 5 minutes. (At this point, you may need to add more water to the pot.)


4. Reduce heat to a medium simmer for the next 10 minutes as you add the remaining chopped vegetables (celery, broccoli, and carrots). Stir the soup.


5, Now add the remaining of the bouillon to the soup and crack open the eggs above the soup while it is cooking.
(Give space to each egg in the liquid as you crack it.)


6. Stir the soup once again and reduce heat to a low simmer. Here you can taste to see if the soup flavor is good enough or needs more bouillon. The pinch of salt can be added if desired.


7. Optional Step: Add cilantro leaves to the top of the soup.


8, Turn off the heat and cover.
