About the Recipes

Ever since I got diagnosed as hypoglycemic, it was a struggle for me to eat the same foods coming from my Central American background without feeling a blood sugar crash as a result of it. In a typical Hispanic cuisine, foods are composed of high fats as well as carbs, which can lead people like me to feel deeply low in functionality, trying to come up with strategies to stabilize oneself before something medically tragic happens. This can also be very similar to those dealing with Type 1 Diabetes.

As I have now been able to stabilize my blood sugar better with constant monitoring, I have decided to recreate or revamp traditional recipes of foods that I once loved and enjoyed into recipes that anyone can enjoy—more specially towards hypoglycemics and diabetics.

These recipes have been tested by myself and others, and as a result, very little glucose spikes have occurred, followed by the satisfaction of an accurate taste of the dish!
